Fresh root, lemon, and a ribbon of honey.
This is the kitchen-apothecary staple: a thumb of organic ginger, a lemon, and patience. Simmering the root a little longer draws more heat than a quick steep.

Ingredients
2 cups
- Fresh organic ginger root · thinly sliced4 cm
- Organic lemon4 wheels
- Raw honey1–2 tsp
Method

Simmer ginger slices in 500 ml water for 8–10 minutes.

Take off the heat, add lemon, and rest 2 minutes.

Strain into cups. Stir honey in when it is warm, not boiling.
