Echinacea is a short-course plant, not a daily forever tea. Combined with elderberry and ginger it becomes a proper winter pot — earthy, a little tingly, clearly medicinal in the old kitchen sense.

Ingredients
2 cups
- Organic echinacea root and herb1 tbsp
- Organic dried elderberries1 tsp
- Fresh ginger3 slices
Method

Simmer echinacea and elderberry 10 minutes.

Add ginger off the heat and steep 2 more minutes.

Strain. A little honey is fine.
