Turmeric

Curcuma longa

Kitchen gold for lentils, rice, and a warm milk at night.

Turmeric is a cooking spice first. A pinch in dal or roasted vegetables is the honest use. A cup of warm milk with turmeric, black pepper, and honey is a kitchen habit, not a cure.

Traditional uses

  • Curries, soups, eggs, and roasted cauliflower
  • Warm milk with a pinch of pepper and honey
  • Fresh root grated like ginger

How to prepare

  1. 1

Bloom the powder in oil or ghee for 30 seconds before adding liquid.

  2. 2

Golden milk: ½ tsp powder, a grind of pepper, 250 ml warm milk, honey off the heat.

  3. 3

Fresh root stains — a board you do not mind, or gloves.

Kitchen & home

  • Store powder in the dark; it fades in a sunny spice rack.
  • A slice of fresh root in a pickle jar is traditional in some kitchens.
  • Keep it off white linen.

Go gently

  • Stains skin, stone, and cloth.
  • Culinary amounts. High-dose supplements are a different question — this is the spice jar.
