Roasted dandelion root is the old caffeine-free stand-in for an after-dinner coffee. Bitter on purpose — bitterness is how traditional kitchens woke a heavy meal.

Method

Simmer 10–12 minutes. It wants a boil, not a polite steep.

Strain. Splash of milk if you like it darker and rounder.
