Cinnamon Stick

A simple bark decoction, warming and sweet.

A cinnamon stick simmered ten minutes is one of the oldest kitchen drinks. Ceylon cinnamon is the gentler everyday bark; cassia is louder and heavier in coumarin.

Ingredients

2 cups

  • Organic cinnamon stick · Ceylon if you drink it often1
  • Fresh ginger · optional2 slices

Method

    Simmer the stick in 500 ml water 10–12 minutes.

    Strain. Honey if you want it sweeter.
